Start with clear communication
Everything below assumes coeliac disease has already been diagnosed, because testing depends on gluten still being in the diet [1].
Coeliac Australia advises telling staff that you have coeliac disease and require a gluten-free meal, rather than treating “I prefer no gluten” as equivalent [2]. That gives the venue the relevant reason for checking preparation.
Calling ahead can be useful when the menu is unclear or the kitchen needs time to explain its process.

Ask about the parts most likely to change
Bread, crumbs, pasta, flour-thickened sauces, fryers and preparation surfaces can create obvious questions depending on the dish. There is no need to interrogate every meal with a universal script if the risk is already clear.
A good Guide teaches the reader to identify the relevant uncertainty rather than memorise twenty questions for every restaurant visit.

Accreditation is stronger evidence than a casual label
Coeliac Australia operates an accreditation programme with documented procedures, auditing and testing [2]. That is materially different from a restaurant simply putting “GF” beside a menu item.
The site can explain that distinction but should not maintain its own unofficial list of “safe” restaurants without an equivalent verification process.

No guarantee from a remote Guide
Even a careful conversation cannot let this website guarantee what happened in another kitchen. If something seems wrong when the meal arrives, checking again is reasonable.
The publication’s role is practical preparation and communication, not transferring the restaurant’s food-safety responsibility to the reader or pretending risk can be reduced to zero. If staff cannot answer a material preparation question confidently, choosing a simpler dish or another venue can be a reasonable practical decision.
