Recipes describe technique and hide the freight

Read a recipe for pasta with a tomato sauce and count what it asks you to do. Then read it again and count what it asks you to move. The first list is short and mostly pleasant: chop, stir, season, taste. The second list is longer than anyone expects. Ingredients out of the fridge and onto a surface. A pot to the tap and then to the heat. A jar from a shelf. The pot from the heat to the sink. Water separated from pasta. Pasta into a bowl, bowl to wherever you eat, and everything back again afterwards while you are tired and it is all still greasy.

Occupational therapy research treats meal preparation as a complex multi-step occupation for exactly this reason; a scoping review of cooking in occupational therapy describes it being used both as an assessment of function and as an intervention in its own right, precisely because it strings so many different demands together in sequence [2]. Cooking is not one skill. It is a chain, and a chain fails at whichever link is weakest rather than on average.

For a seated cook, the weak links are overwhelmingly the transport ones, and they are the links that kitchen design conversations pass over in silence. Bench height, cupboard type and appliance placement all describe where you stand still. Nobody sells a fitting for the two metres in between.

In a manual chair, the hands that carry are the hands that drive

This is the constraint that a standing cook never has to think about and never quite believes when it is explained. In a manual chair, your arms are the drivetrain. Moving yourself and carrying an object are competing uses of the same two hands. So every transport in the kitchen resolves into one of three options: put it down, travel, pick it up again, which triples the handling; carry it on your lap and propel with one hand, which is slow and asymmetric; or ask.

The lap option deserves saying plainly rather than being hinted at. A pot of boiling water on your thighs is a hazard, and it is a worse one if you have reduced or absent sensation in the areas it would land on, because the ordinary reflex that pulls a standing person away from a spill is not available. That is not a reason to be told you cannot cook. It is a reason to design the kitchen so that hot full vessels never need to travel at all, which is entirely achievable and is most of what the rest of this piece is about.

Powerchairs change the arithmetic without removing it. One hand is committed to the control, a lap tray helps and also puts the load in front of you where you cannot see the floor, and the machine's footprint decides which routes exist. Different chair, same underlying question: what has to move, how far, and how hot is it.

It is also worth resisting the idea that any of this is uniform. When adults with spinal cord injury were asked about preparing meals at home, difficulty and the need for assistance varied by the particular task and by the person, including by level of injury [4]. Somebody may manage every knife job in the house and want no part of moving a full stockpot. That is a specific, sensible answer to a specific problem, not a general verdict on their independence.

The three transports with the worst odds

Hot liquid is first and it is not close. Draining pasta, tipping a stockpot, moving a full pan of oil: heavy, unstable, unforgiving, and requiring a controlled two-handed lift over a distance. If you fix nothing else in your kitchen, fix this one.

Oven trays are second, and the geometry is the problem rather than the weight. A tray comes out at arm's length, at whatever height the oven sits, hot on both sides, and needs somewhere to land within about one second of clearing the door. A drop-down oven door also puts a hot horizontal barrier between you and the shelf, which is why the same accessible design standard that everyone quotes for bench heights also asks for oven controls on the front panel and, for side-hinged ovens, a work surface next to the latch side of the door [1]. That second provision is the interesting one: the standard is not describing an oven, it is describing a landing place.

Shopping is third and the least respected, because it happens once a week in place of every night and so never gets designed for. Twenty kilograms of food arrives at a front door in bags with handles that cannot be gripped from a seated position, and then has to travel, be lifted, be sorted and be put away at heights chosen by somebody else. More cooking gets abandoned at this step than at any pan.

Notice what those three have in common. None of them is about skill, and none of them improves with practice. They are load, height and distance problems, which means they answer to changed logistics rather than to trying harder.

Delete the trip instead of making it easier

The strongest moves here all have the same shape: they remove a journey instead of making the journey safer. Cook grains by absorption, in measured water, so there is nothing to drain. Buy pulses in tins and rinse them in a sieve under the tap instead of pouring a hot pot into one. Cook pasta in a measured amount of water that has all been absorbed or reduced by the time it is done, or in the sauce itself, which is a real cooking method and not a compromise. Bake in the dish you will eat from. Poach fish in a shallow pan you can serve straight out of.

Where the contents must move, move the contents and not the container. A ladle transfers a litre of soup from pot to bowl in six small controlled movements, none of which requires lifting anything heavy, and the bowl is already sitting where it is going to be eaten. A heatproof jug does the same for stock. This one habit removes most of the hot-liquid risk in an ordinary kitchen, and it costs nothing but the small indignity of not doing it the way it is done on television.

Where something genuinely has to travel, slide rather than lift. A continuous surface from the cooktop to the landing area, made of bench, a heatproof board or a trolley locked against the run, turns a lift into a push. Silicone mats, a folded tea towel under a hot dish, or a plain wooden board all work as a sled. This is also why a lot of seated cooks end up with small vessels instead of one big one: two litres in two pots you can slide beats four litres in one you cannot.

And use the whole toolkit of appliances that cook where you sit. A benchtop oven, a slow cooker, an electric pan or a rice cooker placed at the front edge of a run or on a stable table removes the tallest and most awkward transport in the house, which is the one to and from a full-size oven. There is a real limit here worth naming: an appliance on a table is only as safe as the table, and a cord across a route is a hazard of its own.

Build a road, and put a landing at both ends of it

Once you start thinking in journeys, the kitchen layout question changes from where should things be to what is the route. A route needs to be clear when the dishwasher is open, when the bin is out, and when another person is in the room, which is the state kitchens are usually in at half past six in place of the state they are in when they are measured.

Every hot journey needs a defined landing: a fixed, cleared, heatproof place that is always empty when something is coming out. Not a corner of the bench that usually has room. The distinction matters because the failure mode is arriving somewhere with a hot tray and finding the space occupied, which is when people improvise, and improvising with a hot tray is where the injuries happen.

The general strategy has support behind it, even though no study will tell you where to put your trolley. A systematic review of home modification interventions for community-dwelling adults with health conditions found such interventions can improve participation in everyday activities [3], and qualitative accounts from people whose homes have been modified describe the gains in terms of what became possible at home rather than in terms of the hardware [5]. Route and landing changes are cheap members of that family, which is a good reason to try them before anything is ripped out.

A grocery landing works the same way and is worth setting up permanently: one clear surface at a workable height, near the door, where everything gets put down once. Sorting happens there, in a seated position, at your own pace, and only the things that must go high go high. It converts a single overwhelming lift-and-reach event into a job with a beginning and an end.

Being somebody's hands without becoming their cook

A large share of the people reading this are not the cook. They are the husband who has watched a near miss with a pan and cannot unsee it, the daughter who lives two suburbs away, the flatmate who is not sure whether offering is kind or insulting. The fear is reasonable. Hot liquid transfer is genuinely the sharp end of this, and worrying about it is not catastrophising.

The useful distinction is between taking over a meal and taking over a journey. I will drain that for you is a specific, bounded offer about the one step with the worst odds, and it leaves the cooking where it was. Sit down, I will do it removes the whole occupation, usually permanently, because the skill and the confidence both decay from disuse. Cooking is not a chore being generously absorbed; for a lot of people it is one of the few daily things still entirely theirs, which is why so many carers find their help politely refused.

So negotiate at the level of the step. Ask which journeys the cook wants gone and which they want left alone, and accept the answer even when you would have chosen differently. Do the shopping-unload and the high-cupboard restock, which are one-off, unglamorous and genuinely heavy. Offer to be present rather than useful. This mirrors what the modification literature keeps finding from the other direction: what helps is the fit between the person, the task and the environment, not the intervention considered on its own [5], and the same scoping review that treats cooking as an occupation treats participation in it as the point instead of the output [2].

One last honest thing. Some transports have no good workaround. A whole roasting tray of chicken and fat, a full kettle, a heavy casserole out of a low oven: for some people these will remain two-person jobs or oven-glove-and-somebody-else jobs indefinitely, and no amount of clever sequencing changes that. Naming those three or four specific tasks and arranging help for them is a far better outcome than a slow retreat into food that never needs lifting. It keeps the kitchen, and gives up only the pot.
