Why metric?

  • 100 g rolled oats (dry)
  • 240 ml milk (247 g)
  • 200 g natural low-fat yoghurt
  • 2 small apples, coarsely grated with the skin on (200 g)
  • 45 g almonds, roughly chopped
  • 20 g honey
  • 10 ml lemon juice (10 g)
  • 1 g ground cinnamon

Method

  1. The night before, stir the oats, milk, cinnamon and half the yoghurt together in a bowl or jar. The mixture should look sloppy rather than thick; the oats drink most of the liquid overnight. Cover and refrigerate.
  2. In the morning it will have set to a thick, spoonable mass that holds a furrow. Grate the apples coarsely, skin and all, and toss them with the lemon juice so they stay pale.
  3. Fold the apple, the honey and the remaining yoghurt through the soaked oats. Loosen with a splash more milk until it drops slowly from the spoon rather than sitting in a lump.
  4. Spoon into two bowls and scatter the almonds over. Toast the almonds first in a dry pan over medium heat, shaking often until they smell nutty and colour lightly, if you want more from them.

Cool and cover within two hours of cooking; split large amounts into shallow containers so they chill quickly. Reheat until steaming hot, at least 60°C.
