160 g short pasta (dry)
200 g frozen peas
125 g fresh ricotta (half a 250 g tub)
12 g fresh mint leaves, shredded
20 ml lemon juice (20 g)
25 ml extra-virgin olive oil (23 g)
15 g parmesan, finely grated
1 g iodised table salt, plus more to taste
Ground black pepper, to taste
Method
Cook the pasta in a large pan of boiling salted water until just tender, following the packet timing as a guide and tasting a piece a minute before it is due. It will come out at around 370 g cooked.
Drop the peas into the same pan for the last 2 minutes.
Scoop out a cupful of the cooking water, then drain the pasta and peas.
Beat the ricotta with the lemon juice, oil, parmesan, salt and pepper in the warm pan, adding cooking water a spoonful at a time until it turns into a loose cream that coats the back of a spoon.
Return the pasta and peas to the pan and toss to coat. Stir the mint through at the last moment so it stays green, and add more lemon and pepper to taste.
