Why metric?

  • 90 g rolled oats
  • 40 g almonds, ground
  • 400 ml reduced-fat milk (412 g)
  • 150 ml water (150 g)
  • 2 apples, coarsely grated, skins on (200 g)
  • 2 g ground cinnamon
  • 0.5 g iodised table salt

Method

  1. Blitz the almonds to a coarse meal, about 20 seconds. Finer than that and they go oily.
  2. Put the oats, ground almonds, milk, water, cinnamon and salt in a pan over medium-low heat.
  3. Cook 10-12 minutes, stirring often and scraping the base. The almonds thicken it faster than oats alone, so keep it looser than looks right.
  4. Grate one apple in off the heat and stir it through.
  5. Spoon into bowls and top with the second apple.

Cool and cover within two hours of cooking; split large amounts into shallow containers so they chill quickly. Reheat until steaming hot, at least 60°C.
