Why metric?

  • 120 g quinoa (dry), rinsed well
  • 450 ml reduced-fat milk (463 g)
  • 200 ml water (200 g)
  • 2 bananas, peeled (240 g)
  • 30 g almonds, roughly chopped
  • 2 g ground cinnamon
  • 0.5 g iodised table salt

Method

  1. Rinse the quinoa in a fine sieve under cold water for a good thirty seconds. Unrinsed quinoa tastes soapy and nothing else covers it.
  2. Put the quinoa, milk, water, cinnamon and salt in a pan and bring to a bare simmer. Keep it low: milk catches the moment it boils properly.
  3. Cook 18-20 minutes, stirring every few minutes and scraping the base, until the grains have uncurled into spirals and the liquid has thickened around them.
  4. Mash one banana to a purée and stir it through off the heat.
  5. Slice the second banana. Spoon into bowls, top with it and the almonds.

Cool and cover within two hours of cooking; split large amounts into shallow containers so they chill quickly. Reheat until steaming hot, at least 60°C.
