  • 800 g canned no-added-salt white beans, drained and rinsed
  • 350 g zucchini, cut into half-moons
  • 2 capsicums, cut into chunks (300 g)
  • 1 large onion, sliced (200 g)
  • 400 g canned no-added-salt tomatoes
  • 4 garlic cloves, chopped (20 g)
  • 100 g feta, crumbled
  • 45 ml extra-virgin olive oil (41 g)
  • 4 g dried oregano
  • 12 g fresh basil, torn
  • 1.5 g iodised table salt
  • Ground black pepper, to taste

Method

  1. Heat the oven to 210C/410F. Toss the zucchini, capsicum and onion with two-thirds of the oil, the oregano and the salt and roast 25 minutes.
  2. Warm the rest of the oil in a pan, cook the garlic 30 seconds, add the tomatoes, crush them and simmer 12 minutes until thick.
  3. Stir the beans and the roast vegetables into the sauce and tip it all into a baking dish.
  4. Crumble the feta over and bake 20-25 minutes, until bubbling at the edges and browned in patches on top.
  5. Tear the basil over and grind pepper on.

Reheats well and is good cold.

steaming hot, at least 60°C

Cool and cover within two hours of cooking; split large amounts into shallow containers so they chill quickly. Reheat until steaming hot, at least 60°C.
