Why metric?

Metric avoids regional spoon ambiguity. US uses 5 mL tsp, 15 mL tbsp and 240 mL cup. Small masses stay in grams unless a verified recipe conversion exists. More on measurements

  • 90 g fine semolina
  • 500 ml reduced-fat milk (515 g)
  • 2 apples, peeled and diced (200 g)
  • 18 g honey
  • 10 g unsalted butter
  • 1 g ground cinnamon
  • 0.5 g iodised table salt
  • 25 g almonds, roughly chopped

Method

  1. Cook the apple with the butter and cinnamon in a small pan over medium-low heat for 6-8 minutes, until it collapses when you press it.
  2. Bring the milk and salt to a bare simmer in a second pan.
  3. Pour the semolina in a thin stream with one hand while whisking with the other. Tipped in all at once it lumps, and the lumps do not whisk out.
  4. Cook 3-4 minutes, whisking, until it thickens enough to hold the mark of the whisk.
  5. Spoon into bowls, top with the apple and almonds and thread the honey over.

Safety and storage

steaming hot, at least 60°C

Cool and cover within two hours of cooking; split large amounts into shallow containers so they chill quickly. Reheat until steaming hot, at least 60°C.
