Why metric?

  • 4 slices wholegrain bread (160 g)
  • 150 g fresh ricotta
  • 1 pear, cored and thinly sliced (160 g)
  • 15 g honey
  • 20 g walnuts, roughly chopped
  • 1 g ground cinnamon
  • 10 ml lemon juice (10 g)

Method

  1. Toast the bread. Beat the ricotta with the lemon juice so it spreads.
  2. Beat the ricotta with a fork for a few seconds so it spreads instead of crumbling, and divide it between the slices.
  3. Lay the pear over, shingling the slices so they overlap rather than sitting in a single layer with gaps.
  4. Scatter the walnuts and cinnamon over and thread the honey across.

Serve

Lemon is a commonly reported trigger. If it is one of yours, leave it out — the pear is sweet enough to carry the ricotta on its own, and a little more black pepper does the same job of stopping it tasting flat.

This one is assembled rather than cooked, and the toast goes soft within minutes of the ricotta going on. Keep the ricotta and pear separately and build it again.
