Why metric?

  • 130 g buckwheat groats, labelled gluten free, rinsed
  • 1 eggplant, cut into 3 cm pieces (300 g)
  • 200 g zucchini, cut into half-moons
  • 35 ml extra-virgin olive oil (32 g)
  • 2 garlic cloves, chopped (10 g)
  • 70 g feta, crumbled
  • 10 g flat-leaf parsley, chopped
  • 20 ml lemon juice (20 g)
  • 2 g dried oregano
  • 1 g iodised table salt
  • Ground black pepper, to taste

Method

  1. Heat the oven to 210C/410F. Toss the eggplant and zucchini with two-thirds of the oil, the oregano and the salt, spread them out in one layer and roast 25-30 minutes.
  2. Give them room. Eggplant crowded on a tray steams instead of roasting and stays squeaky in the middle; use two trays rather than one if you need to.
  3. Rinse the buckwheat and simmer it in plenty of water for 10-12 minutes, until tender but still with some bite. Drain well. Buckwheat goes to porridge if you leave it, so start testing at 10 minutes.
  4. Add the garlic to the tray for the last 8 minutes of roasting. Stirred in raw at the end it stays sharp and stays with you; eight minutes in the oven is enough to sweeten it.
  5. Fold the buckwheat, vegetables, lemon juice and remaining oil together. Scatter the feta and parsley over and finish with pepper.

Cool and cover within two hours of cooking; split large amounts into shallow containers so they chill quickly. Reheat until steaming hot, at least 60°C.
