100 g arborio rice (dry)
600 ml milk (618 g)
150 ml water (150 g)
60 g dried apricots, chopped
25 g almonds, roughly chopped
20 g honey
4 g vanilla extract
0.5 g iodised table salt
Method
Put the rice, milk, water, apricots and salt in a heavy saucepan and bring to a bare simmer over medium-low heat, stirring.
Drop the heat as low as it will go and cook 30-35 minutes, stirring every few minutes and scraping the base. It is done when the grains are soft all the way through and a spoonful falls in a loose mound rather than in separate grains.
Toast the almonds in a dry pan over medium heat for 2-3 minutes, until they smell nutty and have taken a little colour. They burn in the thirty seconds after that, so stay there.
Stir the honey and vanilla through off the heat.
Spoon into bowls and scatter the almonds over.
